How to make the best hard boiled eggs

Did you know that the best technique for making perfect boiled eggs is ... not to boil them?

But yes! When boiled, the eggs turn gray and rubbery. Their taste does not change, but their appearance, texture and smell are much less pleasant.

The reason is simple: the "alternative" cooking method proposed below is much softer for the delicate flesh of eggs-the equivalent of steaming rather than large broths. When the water boils vigorously, the white (the outside of the egg) will cook much faster than the center, the yellow. This is why the white becomes much too cooked (and less tender) the time that the yellow becomes just enough. The "steaming" method and cold-water cooking give the two parts of the egg a chance to cook evenly!

When the water does not boil for more than a few seconds, naturally-occurring compounds contained in the eggs also do not have time to break free, so that the eggs smell a lot less bad!

In addition, when eggs are allowed to boil, the shell is much more likely to crack during cooking, since eggs clash with each other and against the pan. So there is no good reason to boil eggs. Try it and you will never come back.

In general, experts recommend 6 minutes for a soft-boiled egg and 11 minutes for a hard-boiled egg .

Leaving eggs to cool before shelling usually also produces better results: if possible, it is better to leave the eggs in cold water for 15 minutes or even to leave them in the fridge all night long. .

The hard-boiled eggs in their shells keep in the fridge for 5 days. It is therefore possible to prepare some at the beginning of the week in anticipation of lunch without problem! To make a sandwich preparation, you crush hard eggs with a fork (with the robot for a few seconds for a smoother texture) with a few tablespoons of mayonnaise, green onion or a few branches of finely chopped chives. salt and pepper.

You can make stuffed eggs by emptying the yolks and crushing them in a bowl, then adding a little mayo and all kinds of ingredients according to the inspiration or the content of the fridge: chopped olives, sriricha bacon crumbs, finely chopped smoked salmon, capers, smoked paprika, lemon peel, Panko breadcrumbs to add crispy ... Then put this preparation in the cavities of the egg whites and serves cold well!

We can integrate them in a salad (for example a  Niçoise  but so not just that )!

They can be added to a delicious potato salad , which becomes a complete meal.
