How to make the best hard boiled eggs

Did you know that the best technique for making perfect boiled eggs is ... not to boil them?

But yes! When boiled, the eggs turn gray and rubbery. Their taste does not change, but their appearance, texture and smell are much less pleasant.

The reason is simple: the "alternative" cooking method proposed below is much softer for the delicate flesh of eggs-the equivalent of steaming rather than large broths. When the water boils vigorously, the white (the outside of the egg) will cook much faster than the center, the yellow. This is why the white becomes much too cooked (and less tender) the time that the yellow becomes just enough. The "steaming" method and cold-water cooking give the two parts of the egg a chance to cook evenly!

When the water does not boil for more than a few seconds, naturally-occurring compounds contained in the eggs also do not have time to break free, so that the eggs smell a lot less bad!

In addition, when eggs are allowed to boil, the shell is much more likely to crack during cooking, since eggs clash with each other and against the pan. So there is no good reason to boil eggs. Try it and you will never come back.

The infallible cooking technique
Carefully place the eggs in a saucepan and fill with 2/3 cold water.
Cover and bring to a boil, remaining close.
As soon as it boils (you will hear the shells begin to bang), close the fire and remove the pan from the round.
Let the eggs rest in the pan with the lid.
How long are they cooked?

It just depends on the tastes! Some people like their flowing yellow while others want it to be perfectly firm.

It depends on more uses: less time for a calf egg, longer for an egg with which we make sandwiches!

In general, experts recommend 6 minutes for a soft-boiled egg and 11 minutes for a hard-boiled egg .

Our tests in photo above : each egg was left 2 minutes longer than the previous one, ie from the left, 4 minutes, 6 minutes, 8 minutes, 10 minutes and 12 minutes.

To shell the eggs

When the eggs have finished their rest time, transfer the pan to the sink and let the cold water run (the water will overflow) for 1 minute or two, time to cool the eggs. To easily peel them, you can then roll them on a board and then peel them.

On the other hand, there is no sure-fire technique to make sure that the eggs run smoothly: sometimes nothing seems to work. This is because there are several factors that influence this, among other things, the age of the eggs. Fresher eggs (especially for lucky ones with chickens at home) are harder to peel-and you can not do much.

Leaving eggs to cool before shelling usually also produces better results: if possible, it is better to leave the eggs in cold water for 15 minutes or even to leave them in the fridge all night long. .

The hard-boiled eggs in their shells keep in the fridge for 5 days. It is therefore possible to prepare some at the beginning of the week in anticipation of lunch without problem! They are shelled only before eating (or transferred to a lunch), their shells being the ideal packaging to preserve them. The only thing to remember is of course to separate them from the raw eggs in the fridge!

Full of good proteins, vitamins and good fats, economical and easily transportable, boiled eggs make a super good snack on the go and can be eaten from lunch to dinner!

You can taste them as they are with a little salt and pepper, a few drops of sriracha sauce or a generous spoon of hummus on top.

A boiled egg, cooked a few minutes and then placed in an egg cup with the top of the shell removed, it's a great classic, especially with tabs of roasted bread buttered to dip!

Soft eggs, it is also divine when placed on a bed of asparagus , avocado slices or spinach returned to the pan for a few minutes with a little garlic!

To make a sandwich preparation, you crush hard eggs with a fork (with the robot for a few seconds for a smoother texture) with a few tablespoons of mayonnaise, green onion or a few branches of finely chopped chives. salt and pepper.

You can make stuffed eggs by emptying the yolks and crushing them in a bowl, then adding a little mayo and all kinds of ingredients according to the inspiration or the content of the fridge: chopped olives, sriricha bacon crumbs, finely chopped smoked salmon, capers, smoked paprika, lemon peel, Panko breadcrumbs to add crispy ... Then put this preparation in the cavities of the egg whites and serves cold well!

We can integrate them in a salad (for example a  Niçoise  but so not just that )!

They can be added to a delicious potato salad , which becomes a complete meal.

You can enjoy one or two in a Ramen soup !

For those who are "sauce type", here is a recipe of creamy dill sauce that really goes well with hard-boiled eggs cut in half.
